Blueberry Smoothie with Carrot Greens

Blueberry Carrot Greens Smoothie Ingredients

If you grow carrots in your garden or if you buy them with the green tops on them still you might be wondering what to do with all of those greens. Don’t throw them out! They are healthy for you and have a great “fresh” flavor. I previously posted a recipe for carrot greens sauce and today I’d like to share my favorite way to use carrot greens in a smoothie. Here’s the recipe. This yields about 3 cups.

Recipe: Blueberry Carrot Greens Smoothie

  • 3/4 cup non-dairy milk (soy, almond, etc)
  • 1+ cup carrot greens, packed
  • 1 cup frozen or fresh blueberries
  • 5 chunks of frozen banana (see picture above)

Directions: Add to the blender in the order listed and blend thoroughly until smooth.


I used frozen blueberries since that is what we had leftover from picking a bunch of them last year. I’ve used fresh ones in this recipe before and you can also try other berries too: blackberries, raspberries, and strawberries are all good in this.

If you would like to try this without the milk it’s not as creamy but still tasty. You can substitute the milk with water (use less) or just extra fresh berries. If you’d like it sweeter, it’s also good with a peeled orange thrown in.
